Ducourt Rosé Limé; Subtle, fresh, with aromas of red berries and grapefruit zest with base notes typical of the region’s wines. Fresh, crisp with a sweentess married with a gentle, fine sparkle.
Potato Mousseline/ 62 Degree Egg/ NJ Prosciutto
Ducourt Blanc Limé; Lively, fresh, lemony and zesty with a base note of Entre-Deux-Mers Sauvignon. Fresh, crisp with sweetness married with a gentle, fine sparkle.
Bay Scallop Ceviche/ Frozen Korean Grapes/ Shiso
Larroque Bordeaux Blanc; Complex aromas of white flowers, exotic fruits, citrus and boxwood with a touch of minerality. Pairs well with aperitif, fish and seafood.
Carnaroli Risotto/ Crispy Veal Sweetbreads/ Braised Shiitake
Château Plaisance Saint-Émilion; Great dark ruby colour. The nose is elegant with black cherry & raspberry notes along with integrated oak fragrance. Round & full bodied with a long fruit driven palate, supported by mineral trace. Perfect with pork, lamb, red meat, venison and cheeses.
Pan Roasted Venison/ Salsify/ Creamed Brussel Sprouts/ Juniper
Château Jacques Noir Saint-Émilion; Plenty of oak reveals great maturity and a balanced structure supported by soft tannins. Persistent notes of strawberry and blackberry bring freshness and elegance on the finish.
