First & Second Course
Porchetta di Testa; burnt honey, boubon pickled mustard seeds, Ava’s bread
Tenderloin; fennel & orange rubbed, pork fat potato hash, blackberry preserve
Hunter Glenn Estate Chardonnay 2017; This wine beams pale yellow inside and out. First aromatic impressions are of lemon curd and fresh pressed apples, followed by wet river rock, jasmine and beeswax. On the palate, tart Granny Smith apples, a perfect crème anglaise, and light note of saline.
Third & Fourth Course
Shoulder Confit Raviolis; sweet corn, cracked peas, pork consommé, cacciocavallo
End of Summer Sausage; parsley, smoked provolone, pickled peppers & onions
Hunter Glenn Red Blend 2016; This vintage is a deep scarlet red that lends to its refined elegance. Aromas of pink peppercorn, oregano and cherry cobbler brood from the glass, while a bouquet of fine cedar and bourbon vanilla prove perfect integration of oak. The first sip shows it’s a classic Napa Valley red wine, driven by Bing cherry, brûléed sugar, with hints of violet and cinnamon. Finishing with a dusting of dark cocoa.
Fifth & Sixth Course
12hr Brick Oven Braised Shank; house made blue corn tortillas, peach salsa, chili crema, assortment of pickles
Pressed Pork Belly; black garlic & chili braised, roasted fennel, crisp zucchini, pea relish
Hunter Glenn Cabernet Franc 2014; Dark ruby with a soft polish. The aromatic hints of muscovado sugar and black pepper intrigue your senses to dive deeper, after swirling in your glass the subtle notes of lavender and fennel rise. On the palate the wine is most elegant with flavors of crème de cassis, bourbon coffee, and sweet mint. While a perfectly laid balance of tannins allow the finish to linger until the much awaited next sip.
Seventh & Eighth Course
Smoked Pork Collar; bobolink drum cheese, pickled summer berries, cracklings
Proscuitto Wrapped Boneless Loin Roast; wild arugula, corn marmalade, white peach gastrique
Hunter Glenn Syrah 2016; The color of finely polished mahogany, this is a luxurious Syrah to enjoy over and over. Sweet licorice and white pepper are what you notice first followed by smoky bacon and candied walnuts. The flavors on this wine are driven by a sarsaparilla backbone along with undertones of espresso and boysenberry.
Chocolate Chess Pie; leaf lard crust, whipped cream
