Made from a traditional process known as sun-dried (soleo) Pedro Ximénez whereby the fruit turns to raisins. Then aged in casks for many years using the traditional Solera system within the ancient cathedral style cellars of Barbadillo. Estate bottled by Bodegas Barbadillo, producers of the finest sherries since 1821.
